Sounds like a bad thermoswitchhere is the explanation why it comes on with the ac the electric radiator cooling fan assembly is controlled by a thermoswitch located in the side of the radiatorat higher coolant temperatures the switch closes to start the cooling fans.

Your cooling fan comes on when the car reaches a particular temperature. But notice it did not come on. So i shut the car down to cool the engine because i didnt want to blow head gasket.

Have you checked for a leak in the cooling system. Coolant and cooling system are good. Will not come on high speed or when ac is off so engine begins to overheat.

And i do know electric cooling fan comes on when it gets hot. The condenser fan if it has a dedicated fan or the radiator fan most always comes in with ac on when the compressor discharge pressure or alternatively the liquid line one. My cooling fans does come on and with ac on they do increases speed but not to the max speed even when the engine is overheating.
